Ingredients

  • 4 slices of bread
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 avocados, sliced
  • 1 lime, juiced
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Toast the bread slices until golden brown.

  2. In a small saucepan, heat the black beans over medium heat until warmed through. Season with salt and pepper to taste.

  3. Mash half of the avocado slices in a bowl with the lime juice until creamy. Season with salt and pepper.

  4. Spread the mashed avocado onto each slice of toast.

  5. Top the avocado with a generous amount of black beans.

  6. Garnish with the remaining avocado slices and sprinkle with chopped cilantro.

  7. Serve immediately and enjoy!
