Serves:

Ingredients

  • 8 oz penne pasta
  • 2 medium potatoes, peeled and diced
  • 1 cup fresh basil leaves
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup pine nuts
  • 2 cloves garlic
  • 1/2 cup extra virgin olive oil
  • Salt and pepper, to taste
  • Optional: cherry tomatoes and fresh basil leaves for garnish

Instructions

  1. Cook the penne pasta in a large pot of salted boiling water until al dente. Drain and set aside.

  2. In the same pot, boil the diced potatoes until tender. Drain and set aside.

  3. In a blender or food processor, combine the basil leaves, Parmesan cheese, pine nuts, and garlic. Pulse until coarsely chopped.

  4. Gradually add the olive oil while the blender is running until the mixture becomes a smooth pesto sauce. Season with salt and pepper.

  5. Return the cooked pasta and potatoes to the pot. Pour the pesto sauce over them and toss until well coated.

  6. Cook over low heat for a few minutes to warm everything through.

  7. Serve hot and garnish with cherry tomatoes and fresh basil leaves, if desired.
