How To Make Vegan Stollen
Turning vegan may look challenging for some, especially for those who can’t turn their eyes away from meat. But they just haven’t found these sumptuous vegan recipes that even non-vegans will surely enjoy!

Ingredients
- 1 ½ cups all-purpose flour
- ¼ cup almond flour
- ¼ cup coconut sugar
- 1 tsp baking powder
- ½ tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp salt
- ½ cup unsweetened applesauce
- ¼ cup melted coconut oil
- 1 tsp vanilla extract
- ¼ cup chopped almonds
- ¼ cup raisins
- ¼ cup dried cranberries
- ¼(175°C) and line a baking sheet with parchment paper.

In a large mixing bowl, whisk together the all-purpose flour, almond flour, coconut sugar, baking powder, cinnamon, nutmeg, and salt.

In a separate bowl, stir together the applesauce, melted coconut oil, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until well combined.

Add the chopped almonds, raisins, dried cranberries, and chopped candied ginger to the dough. Mix until evenly distributed.

Transfer the dough onto the prepared baking sheet and shape it into a loaf or oval shape.

Bake in the preheated oven for 40-45 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

Remove from the oven and let the stollen cool completely on a wire rack.

Once cooled, dust the stollen with powdered sugar before serving.
