Ingredients

  • 1 cup of lentils
  • 4 cups of vegetable broth
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 tsp of cumin
  • 1 tsp of paprika
  • 1/2 tsp of turmeric
  • Salt and pepper to taste
  • 1 tbsp of olive oil
  • Fresh parsley for garnish

Instructions

  1. Rinse lentils and set aside.

  2. In a large pot, sauté onion and garlic in olive oil until fragrant.

  3. Add carrots and celery; sauté for 5 minutes.

  4. Add lentils, vegetable broth, and spices.

  5. Bring to a boil, then reduce heat and let simmer for 30-35 minutes.

  6. Season with salt and pepper to taste.

  7. Serve hot and garnish with fresh parsley.
