How To Make Vegan Christmas Pudding

Turning vegan may look challenging for some, especially for those who can’t turn their eyes away from meat. But they just haven’t found these sumptuous vegan recipes that even non-vegans will surely enjoy!

Serves:

Ingredients

  • 1 cup of mixed dried fruit
  • 1/2 cup of grated carrot
  • 1/2 cup of grated apple
  • 1/2 cup of grated zucchini
  • 1/2 cup of chopped nuts (e.g. walnuts, almonds)
  • 1/4 cup of maple syrup
  • 1/4 cup of molasses
  • 1/4 cup of orange juice
  • 1/4 cup of plant-based milk (e.g. almond milk, soy milk)
  • 1/4 cup of breadcrumbs
  • 1/4 cup of flour
  • 1 tsp of baking powder
  • 1 tsp of cinnamon
  • 1/2 tsp of nutmeg
  • 1/4 tsp of allspice
  • 1/4 tsp of salt

Instructions

  1. In a large mixing bowl, combine the dried fruit, grated carrot, grated apple, grated zucchini, chopped nuts, maple syrup, molasses, orange juice, and plant-based milk.

  2. In a separate bowl, mix together the breadcrumbs, flour, baking powder, cinnamon, nutmeg, allspice, and salt.

  3. Add the dry ingredients to the fruit mixture and stir until well combined.

  4. Grease a pudding basin or heatproof dish and pour the pudding mixture into it.

  5. Cover the basin with a lid or greased foil and place it in a large pan. Fill the pan with enough water to reach halfway up the sides of the basin.

  6. Place the pan on the stove and bring the water to a simmer. Cover the pan and steam the pudding for 2 hours, checking the water level occasionally and topping it up if needed.

  7. Remove the pudding from the pan and allow it to cool slightly before turning it out onto a serving plate.

  8. Serve the vegan Christmas pudding warm, topped with your favorite vegan custard or sauce.
