Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 1 cup cooked rice
  • 1 cup vegan cheese, shredded

Instructions

  1. Preheat oven to 375°F.

  2. Saute onions and garlic in a pan until softened.

  3. Add bell peppers and cook for 2-3 minutes.

  4. Add black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper. Let the mixture simmer for 5 minutes.

  5. In a baking dish, layer the cooked rice and the bean mixture.

  6. Top with vegan cheese.

  7. Bake in the oven for 15-20 minutes until cheese is melted and bubbly.

  8. Serve warm.
