How To Make Baked Vegan Korma
Turning vegan may look challenging for some, especially for those who can’t turn their eyes away from meat. But they just haven’t found these sumptuous vegan recipes that even non-vegans will surely enjoy!

Ingredients
- 1 cup diced potatoes
- 1 cup chopped carrots
- 1 cup chopped bell peppers
- 1 cup cauliflower florets
- 1 cup chopped green beans
- 1 cup chopped onions
- 2 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 1 can (14 oz) coconut milk
- 2 tbsp tomato paste
- 2 tbsp korma spice mix (or a blend of ground cumin, coriander, turmeric, cardamom, and cinnamon)
- 1 tbsp olive oil
- Salt, to taste
- Fresh cilantro, for garnish
Instructions

Preheat the oven to 375°F (190°C).

In a large bowl, combine the potatoes, carrots, bell peppers, cauliflower florets, green beans, onions, garlic, ginger, coconut milk, tomato paste, korma spice mix, olive oil, and salt. Mix well to coat the vegetables.

Transfer the mixture to a baking dish and cover with foil.

Bake for 30-35 minutes or until the vegetables are tender.

Remove the foil and bake for an additional 10-15 minutes or until the top is lightly browned.

Garnish with fresh cilantro before serving.
