Ingredients

  • 6 fresh tomatoes
  • 2 cloves of garlic, minced
  • 1 onion, chopped
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • 1/2 teaspoon of sugar
  • Salt and pepper to taste

Instructions

  1. Bring a pot of water to a boil. Score a small “X” on the bottom of each tomato and blanch them in the boiling water for 1-2 minutes, until the skin starts to peel off.

  2. Remove the tomatoes from the pot and rinse them with cool water. Peel off the skin and chop the tomatoes into small pieces.

  3. Heat the olive oil in a saucepan over medium heat. Add the minced garlic and chopped onion. Cook until the onion is translucent and the garlic is fragrant.

  4. Add the chopped tomatoes to the saucepan and stir well. Let the mixture simmer for about 10 minutes, until it starts to thicken.

  5. Stir in the dried oregano, dried basil, sugar, salt, and pepper. Reduce the heat to low and let the sauce simmer for another 45 minutes to 1 hour, stirring occasionally.

  6. Remove the sauce from the heat and let it cool slightly. Use a blender or immersion blender to puree the sauce until smooth.

  7. Taste the sauce and adjust the seasonings if needed. If you prefer a thinner consistency, you can add a little water to the sauce.

  8. Allow the sauce to cool completely before using it on your pizzas. Store any leftovers in an airtight container in the refrigerator.
