How To Make Rosemary and Thyme Roasted Chicken Recipe

Juicy chicken with crispy skin, infused with flavors of rosemary and thyme.

Ingredients

  • 1 whole chicken (4-5 lbs)
  • 2 tbsp olive oil
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 425°F.

  2. Rinse the chicken and pat dry with paper towels.

  3. In a small bowl, mix together olive oil, rosemary, thyme, salt, and black pepper.

  4. Rub the mixture all over the chicken, making sure to get under the skin as well.

  5. Place the chicken in a roasting pan or baking dish.

  6. Roast in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F.

  7. Let the chicken rest for 10 minutes before carving and serving.
