Ingredients

  • 4 chicken breasts
  • Juice of 1 lemon
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a bowl, combine the lemon juice, minced garlic, olive oil, thyme, rosemary, salt, and black pepper.

  2. Place the chicken breasts in a shallow dish and pour the marinade over them. Make sure they are coated evenly. Let them marinate for at least 15 minutes.

  3. Preheat a grill or grill pan over medium heat. Grill the marinated chicken breasts for about 10-12 minutes per side, or until cooked through. You can also bake them in a preheated oven at 375°F (190°C) for 20-25 minutes.

  4. Once cooked, remove the chicken from the grill or oven and let it rest for a few minutes.

  5. Serve the lemon-herb chicken garnished with fresh parsley. It pairs well with roasted vegetables or a side salad.
