Delicious squares made with a mix of raspberry and apple filling, topped with a sweet crumble.
Serves:
Ingredients
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small cubes
- 1 cup raspberries
- 1 cup diced apples
- 2 tablespoons granulated sugar
- 1 tablespoon cornstarch
Instructions
-
Preheat the oven to 350°F (175°C) and line a 9×9-inch baking dish with parchment paper.
-
In a large bowl, combine the flour, oats, brown sugar, and salt. Add the cold butter and use your fingers or a pastry cutter to cut it into the dry ingredients until crumbly.
-
In another bowl, mix together the raspberries, diced apples, granulated sugar, and cornstarch until well coated.
-
Press half of the crumble mixture into the prepared baking dish to form the base. Spread the raspberry and apple mixture evenly over the base.
-
Sprinkle the remaining crumble mixture over the top of the filling.
-
Bake for 30 minutes or until the top is golden brown and the filling is bubbling.
-
Remove from the oven and let it cool completely before cutting into squares.
-
Serve as is or with a scoop of vanilla ice cream.
