Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup pumpkin puree
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 350°F. Line baking sheets with parchment paper.
  2. In a small bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, and salt.
  3. In a large bowl, beat butter with brown sugar and granulated sugar until creamy.
  4. Add pumpkin puree, egg, and vanilla extract and beat until well combined.
  5. Gradually add the flour mixture to the pumpkin mixture and beat until just combined.
  6. In a separate bowl, beat cream cheese and powdered sugar until smooth.
  7. Using a cookie scoop, drop balls of pumpkin dough onto prepared baking sheets.
  8. Use the back of a spoon or your finger to make an indentation in each cookie.
  9. Fill each indentation with a spoonful of cream cheese mixture.
  10. Bake for 12-14 minutes, or until the edges are lightly browned.
  11. Let cool on baking sheets before serving.
