How To Make Oven-Baked Risotto

A creamy and flavorful risotto, baked in the oven for a hassle-free meal.

Ingredients

  • 1 ½ cups Arborio rice
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup frozen peas
  • ½ cup grated Parmesan cheese
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a large oven-safe dish, combine Arborio rice, vegetable broth, onion, garlic, mushrooms, and peas.

  3. Stir in Parmesan cheese and butter. Season with salt and pepper.

  4. Cover the dish with foil and bake for 25 minutes, until most of the liquid is absorbed and rice is tender.

  5. Remove from the oven and let it rest for a few minutes before serving.

  6. Fluff the risotto with a fork and garnish with additional Parmesan cheese, if desired.
