How To Make Instant Pot® Pork Stew

Ingredients
- 1.5 lb pork shoulder, cubed
- 1 onion, diced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 cloves of garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup beef broth
- 1 bay leaf
- 2 tbsp cornstarch (optional, for thickening)
Instructions

Set the Instant Pot® to sauté mode and heat some oil. Add the pork cubes and brown them on all sides. Remove the pork and set aside.

Add the onions, carrots, and celery to the pot and sauté until they start to soften, about 5 minutes. Stir in the garlic, thyme, rosemary, paprika, salt, and black pepper.

Return the pork to the pot and add the beef broth and bay leaf. Stir to combine.

Close the Instant Pot® lid and set the valve to sealing. Cook on high pressure for 30 minutes.

Once the cooking time is up, allow for a natural pressure release for 10 minutes. Then, carefully quick release any remaining pressure.

If desired, remove some of the liquid from the stew and whisk in the cornstarch to thicken it. Return the thickened liquid to the pot and stir well.

Serve the Instant Pot® Pork Stew hot with your favorite side dish.
