Ingredients

  • 1 1/2 cups heavy cream
  • 1/2 cup almond milk
  • 1/4 cup powdered erythritol
  • 1 tsp vanilla extract
  • 1 packet powdered gelatin
  • Fresh berries for topping

Instructions

  1. In a saucepan, heat the heavy cream and almond milk over medium heat until hot (but not boiling).

  2. Remove from heat and stir in the powdered erythritol and vanilla extract until well combined.

  3. Sprinkle the packet of gelatin on top and whisk vigorously until dissolved.

  4. Pour the mixture evenly into four ramekins or cups and refrigerate for at least 3 hours (or overnight) until set.

  5. To serve, run a knife along the edges of the panna cotta and turn out onto plates. Top with fresh berries and enjoy.
