Ingredients

  • 1 cup natural peanut butter
  • 1/2 cup erythritol sweetener
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda

Instructions

  1. Preheat oven to 350°F.

  2. Mix peanut butter, erythritol, egg, vanilla extract, and baking soda until well combined.

  3. Roll dough into 1″ balls and place on baking sheet.

  4. Use a fork to press down on each cookie, making a criss-cross pattern.

  5. Bake for 10-12 minutes or until edges are lightly golden.

  6. Let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
