  • 1 cup almond flour
  • 1/4 cup unsalted butter, softened
  • 1/4 cup granulated low-carb sweetener
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a mixing bowl, cream together the softened butter, low-carb sweetener, and vanilla extract until well combined.

  3. In a separate bowl, whisk together the almond flour, cinnamon, baking powder, and salt.

  4. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.

  5. Roll the dough into small balls and place them on the prepared baking sheet. Flatten each ball with the back of a fork to create a crisscross pattern.

  6. Bake for 12-15 minutes, or until the edges are golden brown.

  7. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
