How To Make Low Calorie Slow Cooker White Chicken Chili Recipe

Warm and comforting white chicken chili with a healthy, low calorie twist.

Serves:

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. In a slow cooker, combine all ingredients except salt and pepper.

  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.

  3. Remove chicken from slow cooker and shred with two forks, then return to slow cooker.

  4. Season with salt and pepper to taste.
