Ingredients

  • 2 lbs lean beef chuck roast
  • 3 large carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 ½ cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Heat a large skillet over medium-high heat and add the beef roast. Sear on all sides until browned, about 3-4 minutes per side.

  2. Transfer the roast to the slow cooker.

  3. In the same skillet, add the carrots, celery, onion, and garlic. Cook for 3-4 minutes, until slightly softened.

  4. Add the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Cook for 2-3 minutes, stirring constantly.

  5. Pour the vegetable mixture over the beef roast in the slow cooker.

  6. Cover the slow cooker and cook on low for 8 hours.

  7. Serve hot with your favorite side dishes.
