How To Make Low Calorie Slow Cooker Pot Roast Recipe

Ingredients
- 2 lbs lean beef chuck roast
- 3 large carrots, peeled and chopped
- 3 celery stalks, chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 ½ cups beef broth
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- ½ tsp salt
- ¼ tsp black pepper
Instructions

Heat a large skillet over medium-high heat and add the beef roast. Sear on all sides until browned, about 3-4 minutes per side.

Transfer the roast to the slow cooker.

In the same skillet, add the carrots, celery, onion, and garlic. Cook for 3-4 minutes, until slightly softened.

Add the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Cook for 2-3 minutes, stirring constantly.

Pour the vegetable mixture over the beef roast in the slow cooker.
