Ingredients

  • 1 medium eggplant, sliced
  • 1 medium zucchini, sliced
  • 1 red bell pepper, diced
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup canned crushed tomatoes
  • 1 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper, to taste

Instructions

  1. In a slow cooker, add the eggplant, zucchini, bell pepper, onion, and garlic.

  2. Pour the crushed tomatoes on top and stir to combine.

  3. Drizzle the olive oil over the vegetables and sprinkle with basil, oregano, salt, and pepper.

  4. Cover and cook on low heat setting for 5 hours or until all vegetables are tender and cooked through.

  5. Divide into 4 servings and enjoy!
