  • 1 lb ground beef
  • 3 medium zucchinis, spiralized
  • 1 tbsp olive oil
  • 1/2 onion, chopped
  • 2 garlic cloves, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add onion and cook until softened, about 3 minutes.

  3. Add garlic and cook until fragrant, about 30 seconds.

  4. Add ground beef and cook until browned, about 5-7 minutes.

  5. Add spiralized zucchini, salt, and pepper to the skillet. Cook for about 5 minutes or until zucchini is tender-crisp.

  6. Remove from heat and stir in chopped parsley.

  7. Sprinkle grated Parmesan cheese on top and serve.
