  • 4 medium zucchinis
  • 1/2 cup vegan pesto
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions

  1. Cut off the ends of the zucchinis and spiralize them into noodles.

  2. In a large skillet, heat the olive oil and add the zucchini noodles. Cook for 3-4 minutes or until the noodles are slightly tender.

  3. Add the vegan pesto and stir to combine.

  4. Cook for another 2-3 minutes until the pesto is heated through.

  5. Season with salt and black pepper.

  6. Serve hot and garnish with additional vegan pesto and fresh basil, if desired.
