How To Make Tarragon & Mustard Roasted Free-Range Chicken

Ingredients
- 1 whole free-range chicken (about 4 pounds)
- 3 tablespoons Dijon mustard
- 2 tablespoons fresh tarragon leaves, chopped
- 2 cloves of garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 425°F (220°C).

In a small bowl, mix together the Dijon mustard, tarragon, minced garlic, olive oil, salt, and pepper.

Place the chicken on a roasting pan and season the cavity with salt and pepper.

Brush the mustard mixture all over the chicken, making sure to cover the entire surface.

Roast the chicken in the preheated oven for 45 minutes, or until the internal temperature reaches 165°F (75°C).

Remove the chicken from the oven and let it rest for 10 minutes before carving.
