Ingredients

  • 2 tbsp shallots, finely chopped
  • 1 tbsp Dijon mustard
  • 2 tbsp white wine vinegar
  • 1 tsp honey
  • 1/4 cup olive oil
  • 1 tbsp fresh tarragon, finely chopped
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together shallots, Dijon mustard, white wine vinegar, honey, salt and pepper.

  2. Slowly drizzle in olive oil while whisking continuously to create a smooth emulsion.

  3. Stir in fresh tarragon.

  4. Serve immediately or refrigerate until ready to use.
