How To Make Chicken, Edamame & Ginger Pilaf

Ingredients
- 2 cups cooked chicken, diced
- 1 cup edamame, shelled
- 1 tbsp ginger, grated
- 1 cup basmati rice
- 2 cups chicken broth
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 2 green onions, sliced
- 1/4 cup cilantro, chopped
- Salt to taste
Instructions

In a large skillet, heat the sesame oil over medium heat.

Add the ginger and sauté for 1 minute until fragrant.

Add the rice and cook for another 2 minutes, stirring constantly.

Stir in the chicken broth and soy sauce, then bring to a boil.

Reduce heat to low, cover, and simmer for 15 minutes until the rice is fully cooked.

Stir in the cooked chicken and edamame, and cook for an additional 2-3 minutes until heated through.

Season with salt to taste.

Garnish with green onions and cilantro before serving.
