Ingredients

  • 2 cups cooked chicken, diced
  • 1 cup edamame, shelled
  • 1 tbsp ginger, grated
  • 1 cup basmati rice
  • 2 cups chicken broth
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 green onions, sliced
  • 1/4 cup cilantro, chopped
  • Salt to taste

Instructions

  1. In a large skillet, heat the sesame oil over medium heat.

  2. Add the ginger and sauté for 1 minute until fragrant.

  3. Add the rice and cook for another 2 minutes, stirring constantly.

  4. Stir in the chicken broth and soy sauce, then bring to a boil.

  5. Reduce heat to low, cover, and simmer for 15 minutes until the rice is fully cooked.

  6. Stir in the cooked chicken and edamame, and cook for an additional 2-3 minutes until heated through.

  7. Season with salt to taste.

  8. Garnish with green onions and cilantro before serving.
