Ingredients

  • 1 large eggplant, sliced in rounds
  • 1 pound ground beef
  • 1/2 onion, chopped
  • 2 garlic cloves, minced
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup keto-friendly marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  1. Preheat oven to 375°F.

  2. In a large skillet, brown beef with onions, garlic, Italian seasoning, salt, and pepper.

  3. Remove from heat and fold in keto-friendly marinara sauce.

  4. Spread a spoonful of sauce at the bottom of an 8×8 inch casserole dish.

  5. Add a layer of eggplant and top with meat sauce, then sprinkle shredded mozzarella cheese on top.

  6. Repeat layers until all ingredients are used up, finishing with a layer of cheese.

  7. Cover dish with foil and bake for 30 minutes.

  8. Remove foil and bake for an additional 10-15 minutes or until cheese is melted and bubbly.

  9. Let cool for 5-10 minutes before serving.

  10. Garnish with fresh basil leaves.
