How To Make Keto Eggplant Lasagna Casserole Recipe
Delicious and hearty baked dish made with layers of eggplant, ground beef, and cheese, all with the Keto-friendly low carb twist.

Ingredients
- 1 large eggplant, sliced in rounds
- 1 pound ground beef
- 1/2 onion, chopped
- 2 garlic cloves, minced
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup keto-friendly marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- Fresh basil leaves for garnish
Instructions

Preheat oven to 375°F.

In a large skillet, brown beef with onions, garlic, Italian seasoning, salt, and pepper.

Remove from heat and fold in keto-friendly marinara sauce.

Spread a spoonful of sauce at the bottom of an 8×8 inch casserole dish.

Add a layer of eggplant and top with meat sauce, then sprinkle shredded mozzarella cheese on top.
