How To Make Keto Air Fryer Eggplant Parmesan Recipe
A delicious low-carb version of the classic Italian dish, made with tender eggplant slices, melted mozzarella cheese and topped with zesty marinara sauce.

Ingredients
- 1 medium eggplant, sliced into rounds
- 1 cup of almond flour
- ¼ cup of grated Parmesan cheese
- 2 eggs, beaten
- 1 tsp of Italian seasoning
- Salt and black pepper
- 1 cup of marinara sauce
- 1 cup of shredded mozzarella cheese
- Olive oil cooking spray
Instructions

Preheat the air fryer to 400°F.

Prepare a breading station with three bowls: almond flour mixed with Italian seasoning, beaten eggs, and Parmesan cheese.

Dip each eggplant round into the almond flour, then the egg, and finally, the Parmesan cheese mixture.

Arrange the breaded eggplant slices in a single layer in the air fryer basket.

Spray the eggplant with olive oil cooking spray.

Air-fry for 10-12 minutes, flipping halfway through cooking time.
