Ingredients

  • 2 medium zucchini, sliced into fries
  • 1/2 cup almond flour
  • 1/4 cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 2 large eggs, beaten
  • Cooking spray

Instructions

  1. Preheat air fryer to 400°F.

  2. In a shallow dish, combine almond flour, parmesan cheese, garlic powder, Italian seasoning, and salt.

  3. In another shallow dish, whisk the eggs.

  4. Dip each zucchini fry in the egg mixture and then coat with the almond flour mixture.

  5. Lightly spray the air fryer basket with cooking spray and arrange the fries in a single layer.

  6. Air fry for 12 minutes, flipping halfway through, until the fries are golden brown and crispy.

  7. Serve hot with your favorite dipping sauce.
