How To Make Homemade Gnocchi
Soft, pillowy potato dumplings that are perfect for busy weekday meals or special occasions.

Ingredients
- 2 large potatoes, peeled and boiled until tender
- 1 egg, lightly beaten
- 1/2 tsp salt
- 1 cup all-purpose flour
- Salted boiling water
Instructions

Mash the boiled potatoes in a large mixing bowl until smooth.

Mix in the beaten egg and salt until well combined.

Add in the flour a little at a time, stirring with a wooden spoon until a dough forms.

Knead the dough for 2-3 minutes until it becomes smooth and elastic.

Divide the dough into 4 equal parts.

Roll each part into a long cylinder, about 3/4 inch thick.

Use a sharp knife to cut the cylinder into 1 inch long pieces.

Press each piece gently with a fork to create ridges on one side.

Drop the gnocchi into the boiling water and cook for about 2-3 minutes or until they float to the surface.

Remove the gnocchi with a slotted spoon and place them in a bowl.
