  • 8 eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheese
  • 1/4 cup diced onions
  • 1/4 cup diced bell peppers
  • 1/4 cup diced mushrooms
  • 1/4 cup diced tomatoes
  • Salt and pepper, to taste
  • Cooking oil or butter, for frying

Instructions

  1. In a bowl, whisk the eggs and milk together until well combined. Season with salt and pepper.

  2. Heat a bit of cooking oil or butter in a non-stick skillet over medium heat.

  3. Add the diced onions, bell peppers, and mushrooms to the skillet. Cook until softened, about 5 minutes.

  4. Pour the whisked eggs into the skillet, covering the cooked vegetables. Cook for 2-3 minutes or until the edges begin to set.

  5. Sprinkle the diced tomatoes and shredded cheese over one half of the omelette.

  6. Use a spatula to carefully fold the other half of the omelette over the filling. Cook for another 2-3 minutes or until the cheese is melted and the omelette is cooked to your desired doneness.

  7. Slide the omelette onto a plate and cut into wedges. Serve hot.
