Ingredients

  • 2 cups fresh raspberries
  • 2 tablespoons chia seeds
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice

Instructions

  1. In a saucepan, combine the fresh raspberries, honey (or maple syrup) and lemon juice.

  2. Cook over medium heat, stirring occasionally, until raspberries begin to break down, about 5 minutes.

  3. Mash the raspberries with a fork or potato masher to desired consistency.

  4. Stir in the chia seeds and continue cooking for another 10-15 minutes, until the jam thickens.

  5. Remove from heat and allow the jam to cool.

  6. Transfer the jam to a clean jar and refrigerate for at least 1 hour to allow it to set.

  7. Serve the raspberry chia jam on toast, crackers, or use as a topping for yogurt or oatmeal.
