  • 4 large tomatoes
  • 4 oz goat’s cheese
  • 2 tbsp fresh basil, chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Slice off the tops of the tomatoes and carefully scoop out the seeds and pulp.

  3. In a bowl, mix the goat’s cheese, basil, olive oil, salt, and pepper.

  4. Fill each tomato with the goat’s cheese mixture and place them on a baking sheet.

  5. Bake for 20 minutes, or until the tomatoes are soft and the cheese is melted and golden.

  6. Serve hot as an appetizer or side dish.
