  • 1 cup almond flour
  • 1/4 cup tapioca starch
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup honey
  • 2 eggs
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • Sliced almonds for garnish (optional)

Instructions

  1. Preheat oven to 350°F (180°C) and line an 8-inch cake pan with parchment paper.

  2. In a medium bowl, whisk together almond flour, tapioca starch, baking soda, and salt.

  3. In a separate bowl, whisk together honey, eggs, melted coconut oil, and vanilla extract.

  4. Add dry ingredients to the wet mixture and stir until just combined.

  5. Pour batter into the prepared pan and scatter sliced almonds over the top (if using).

  6. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.

  7. Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
