- 2 eggs
- 1 cup gluten-free flour
- 1/2 cup almond flour
- 1/2 cup granulated sugar
- 1/4 cup lemon juice
- Zest of 1 lemon
- 1/4 cup vegetable oil
- 1/4 cup plain yogurt
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup powdered sugar (for the drizzle)
Instructions

Preheat the oven to 350°F (175°C). Grease a small loaf pan.

In a bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, vegetable oil, and plain yogurt.

In another bowl, mix together the gluten-free flour, almond flour, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, stirring until well combined.

Pour the batter into the prepared loaf pan and smooth the top.
