How To Make Gluten-free Carrot Cake
A delicious, gluten-free carrot cake that is moist and flavorful.

Ingredients
- 2 cups grated carrots
- 1 cup gluten-free flour
- 1/2 cup almond flour
- 1/2 cup coconut sugar
- 1/4 cup melted coconut oil
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup chopped walnuts (optional)
Instructions

Preheat oven to 350°F (175°C) and grease a baking pan.

In a large mixing bowl, whisk together the grated carrots, gluten-free flour, almond flour, coconut sugar, melted coconut oil, eggs, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

Fold in the chopped walnuts, if desired.

Pour the batter into the greased baking pan and spread it evenly.

Bake in the preheated oven for 30 minutes or until a toothpick inserted into the center comes out clean.
