A delicious and moist bread made with gluten-free flour and grated zucchini.

Ingredients
- 2 cups gluten-free flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 2 eggs
- 1/2 cup honey
- 1/3 cup coconut oil
- 1 tsp vanilla extract
- 1 1/2 cups grated zucchini
Instructions

Preheat the oven to 350°F.

In a mixing bowl, combine the gluten-free flour, baking powder, baking soda, salt, and cinnamon.

In another mixing bowl, whisk the eggs, honey, coconut oil, and vanilla extract.

Add the grated zucchini to the wet ingredients and mix well.

Combine the wet and dry ingredients and mix well.

Grease a loaf pan and pour the mixture into the pan.

Bake for 50 minutes or until a toothpick comes out clean.
