How To Make Irish Stew

Ingredients
- 1 ½ pounds stewing beef, cut into chunks
- 2 tablespoons flour
- salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 4 carrots, peeled and sliced
- 4 potatoes, peeled and diced
- 2 cups beef broth
- 1 cup Guinness beer (optional)
- 2 tablespoons tomato paste
- 2 sprigs of thyme
- 2 bay leaves
- chopped fresh parsley, for garnish
Instructions

In a large bowl, season the beef chunks with flour, salt, and pepper.

Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the beef chunks in batches until they are nicely seared. Remove from the pot and set aside.

In the same pot, add the diced onion and minced garlic. Cook until softened and fragrant, about 5 minutes.

Add the carrots and potatoes to the pot, along with the beef broth, Guinness beer (if using), tomato paste, thyme sprigs, and bay leaves. Stir well to combine.

Return the seared beef to the pot, making sure it is submerged in the liquid. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the beef is tender and the flavors have melded together.

Remove the thyme sprigs and bay leaves from the pot. Taste and adjust seasoning if needed.

Serve the Irish stew hot, garnished with chopped fresh parsley.
