Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin or line with muffin liners.

  2. In a large bowl, mix together mashed bananas, sugar, vegetable oil, egg, and vanilla extract.

  3. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.

  4. Gradually add the dry ingredients to the banana mixture, stirring until just combined.

  5. Fill muffin cups about three-quarters full with the batter.

  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  7. Allow muffins to cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
