How To Make Cranberry Walnut Quinoa Salad (Gluten-Free)
A delicious and filling salad with quinoa, dried cranberries, walnuts and fresh herbs, perfect for a healthy lunch or dinner.

Ingredients
- 1 cup quinoa
- 2 cups water
- 1/4 cup dried cranberries
- 1/4 cup chopped walnuts
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- Salt and pepper to taste
Instructions
- Rinse quinoa in cold water.
- Bring quinoa and water to a boil, then reduce heat and simmer for 15 minutes.
- In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
- In a large bowl, combine cooked quinoa, dried cranberries, chopped walnuts, and chopped herbs.
- Pour the dressing over the quinoa mixture and toss to combine.
- Serve and enjoy!
