A delicious and filling salad with quinoa, dried cranberries, walnuts and fresh herbs, perfect for a healthy lunch or dinner.

Serves:

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1/4 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa in cold water.
  2. Bring quinoa and water to a boil, then reduce heat and simmer for 15 minutes.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
  4. In a large bowl, combine cooked quinoa, dried cranberries, chopped walnuts, and chopped herbs.
  5. Pour the dressing over the quinoa mixture and toss to combine.
  6. Serve and enjoy!
