How To Make Gluten-Free Quinoa Salad Recipe

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can chickpeas, drained and rinsed
  • 1 red bell pepper, chopped
  • 1 small red onion, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • salt and pepper

Instructions

  1. Rinse quinoa in a fine-mesh strainer and add to a pot with vegetable broth. Bring to boil, reduce heat, and let simmer for 15-20 minutes.

  2. While quinoa is cooking, prepare the vegetables and mix together in a bowl.

  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to make the dressing.

  4. Once quinoa is cooked, let it cool for a few minutes before mixing it with the vegetables.

  5. Add dressing and mix well.

  6. Serve chilled and top with cranberries and feta cheese.
