How To Make Gluten-Free Quinoa Salad Recipe
A healthy and nutritious salad packed with protein and fresh vegetables.
Serves:
Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 can chickpeas, drained and rinsed
- 1 red bell pepper, chopped
- 1 small red onion, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup dried cranberries
- 1/4 cup crumbled feta cheese
- 1/4 cup olive oil
- 2 tbsp lemon juice
- salt and pepper
Instructions

Rinse quinoa in a fine-mesh strainer and add to a pot with vegetable broth. Bring to boil, reduce heat, and let simmer for 15-20 minutes.

While quinoa is cooking, prepare the vegetables and mix together in a bowl.

In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to make the dressing.

Once quinoa is cooked, let it cool for a few minutes before mixing it with the vegetables.

Add dressing and mix well.

Serve chilled and top with cranberries and feta cheese.
