How To Make Curried Rice & Egg Salad
A flavorful and vibrant salad with the perfect balance of curried rice and boiled eggs.

Ingredients
- 1 cup basmati rice
- 1 tablespoon curry powder
- 4 boiled eggs, peeled and quartered
- 1/2 cup diced cucumber
- 1/2 cup diced bell peppers
- 1/4 cup chopped red onion
- 1/4 cup chopped cilantro
- 1/4 cup mayonnaise
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions

Cook the basmati rice according to package instructions. Set aside to cool.

In a small bowl, combine curry powder, mayonnaise, lime juice, salt, and pepper. Mix well.

In a large mixing bowl, combine cooked rice, boiled eggs, cucumber, bell peppers, red onion, and cilantro.

Pour the curry mayonnaise dressing over the rice mixture and gently toss until well combined.
