How To Make Curried Rice & Egg Salad

A flavorful and vibrant salad with the perfect balance of curried rice and boiled eggs.

Ingredients

  • 1 cup basmati rice
  • 1 tablespoon curry powder
  • 4 boiled eggs, peeled and quartered
  • 1/2 cup diced cucumber
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Cook the basmati rice according to package instructions. Set aside to cool.

  2. In a small bowl, combine curry powder, mayonnaise, lime juice, salt, and pepper. Mix well.

  3. In a large mixing bowl, combine cooked rice, boiled eggs, cucumber, bell peppers, red onion, and cilantro.

  4. Pour the curry mayonnaise dressing over the rice mixture and gently toss until well combined.

  5. Adjust seasoning if needed.

  6. Serve chilled and enjoy!
