  • 1/2 cup rice vinegar

Instructions

  1. Peel and thinly slice the ginger.

  2. In a small saucepan, combine rice vinegar, sugar, and salt. Heat over medium heat until sugar and salt dissolve.

  3. Place the sliced ginger in a heatproof container or jar.

  4. Pour the hot vinegar mixture over the ginger slices.

  5. Let it cool to room temperature, then cover and refrigerate for at least 1 hour before serving.
