How To Make The Ultimate Makeover: Macaroni Cheese

- 8 oz whole wheat macaroni
- 2 cups cauliflower florets
- 1 cup low-fat milk
- 1 cup low-sodium vegetable broth
- 2 tbsp whole wheat flour
- 1 tbsp unsalted butter
- 1 tsp dijon mustard
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp paprika
- 1/4 tsp black pepper
- 1 cup reduced-fat cheddar cheese, shredded
- 1/4 cup grated Parmesan cheese
Instructions

Cook the macaroni according to package directions. During the last 2 minutes of cooking, add the cauliflower florets. Drain and set aside.

In a separate pot, heat the milk and vegetable broth over medium heat until simmering.

In a small bowl, whisk together the flour and butter to make a roux. Gradually whisk the roux into the simmering milk mixture until thickened.

Stir in the dijon mustard, garlic powder, onion powder, paprika, and black pepper.

Reduce the heat to low and stir in the cheddar cheese until melted and smooth. Remove from heat.

In a baking dish, combine the cooked macaroni, cauliflower, and cheese sauce.

Sprinkle the Parmesan cheese on top.

Bake in a preheated oven at 350°F (175°C) for 15 minutes, or until the top is golden and bubbly.
