  • 4 cups mixed berries
  • 1/2 cup chopped nuts
  • 1/4 cup unsweetened shredded coconut

Instructions

  1. In a medium saucepan, combine quinoa, almond milk, honey, vanilla extract, cinnamon, and salt. Bring to a boil.

  2. Reduce heat to low, cover, and simmer for 20-25 minutes, or until quinoa is tender and liquid is absorbed.

  3. Divide quinoa among four bowls. Top with mixed berries, chopped nuts, and shredded coconut.
