How To Make Buckwheat Galettes

These savory galettes made with buckwheat flour are a delicious and gluten-free alternative to traditional pancakes.

Ingredients

  • 1 cup buckwheat flour
  • 1/2 tsp salt
  • 2 cups water
  • 2 large eggs
  • 2 tbsp melted butter
  • 4 slices ham
  • 4 eggs
  • Salt and pepper, to taste
  • Fresh herbs, for garnish

Instructions

  1. In a large bowl, whisk together the buckwheat flour, salt, water, eggs, and melted butter until smooth.

  2. Heat a non-stick skillet over medium heat and pour 1/4 cup of batter onto the skillet, spreading it out into a thin circle.

  3. Cook for 2-3 minutes on each side, until golden brown. Repeat with the remaining batter.

  4. In a separate skillet, fry the ham slices until heated through.

  5. In the same skillet, fry the eggs until cooked to your desired doneness.

  6. Place a slice of ham and a fried egg on each galette. Season with salt and pepper, and garnish with fresh herbs.

  7. Serve hot and enjoy!
