
How To Make Salmon & Rocket Pasta

Ingredients
- 8 oz (225g) salmon fillets
- 8 oz (225g) pasta
- 2 cups (60g) rocket leaves
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Juice of 1 lemon
- Salt and pepper to taste
- Grated Parmesan cheese, for serving
Instructions

Cook the pasta according to package instructions. Drain and set aside.

Season the salmon fillets with salt and pepper. Heat 1 tbsp of olive oil in a large skillet over medium heat. Cook the salmon for about 4 minutes on each side, or until cooked through. Remove from skillet and let it rest for a few minutes. Flake the salmon into bite-sized pieces.

In the same skillet, heat the remaining 1 tbsp of olive oil over medium heat. Add the minced garlic and cook for 1 minute, until fragrant. Add the rocket leaves and cook until wilted, about 2 minutes.

Add the cooked pasta and flaked salmon to the skillet. Pour in the lemon juice and toss everything together. Season with salt and pepper to taste.

Serve the pasta in bowls, topped with grated Parmesan cheese.
