Ingredients

  • 2 ripe avocados, diced
  • 2 fresh mackerel fillets, skin and bones removed, diced
  • 2 tbsp of fresh lemon juice
  • 1 tbsp of olive oil
  • ½ small red onion, finely chopped
  • 2 tbsp of fresh parsley, finely chopped
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix together diced avocado, mackerel, lemon juice, olive oil, red onion, and parsley.

  2. Season with salt and pepper to taste.

  3. Serve chilled in small bowls or on a bed of lettuce.
