Ingredients

  • 4 slices of bread
  • 1 can of herring fillets in oil
  • 2 cloves of garlic, minced
  • 2 tbsp of olive oil
  • 2 tbsp of capers, chopped
  • 1 tbsp of lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F.

  2. Brush the bread slices with olive oil and place them on a baking sheet. Toast in the oven for 5-7 minutes or until golden brown.

  3. In a small bowl, mix together the garlic, capers, lemon juice, salt, and pepper.

  4. Top each bread slice with a herring fillet and spoon the garlic-caper mixture over the fish.

  5. Return the bruschettas to the oven and bake for another 5 minutes.

  6. Garnish with fresh parsley and serve.
