Ingredients

  • 4 small potatoes, peeled and sliced
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1 tbsp tomato paste
  • 1/2 cup water
  • 1/2 tsp dried thyme
  • 1 bay leaf
  • 8 oz herring fillets, diced
  • salt and black pepper to taste
  • parsley for garnish

Instructions

  1. Sauté potatoes in olive oil until lightly browned, about 5 minutes.

  2. Add onion and garlic and cook until softened, about 3 minutes.

  3. Stir in tomato paste, water, thyme, and bay leaf.

  4. Simmer for 15-20 minutes until potatoes are tender and sauce has thickened.

  5. Add diced herring fillets and cook 5 minutes more.

  6. Season with salt and pepper to taste.

  7. Garnish with parsley before serving.
