Ingredients

  • 4 chicken breasts
  • 1/2 teaspoon saffron threads
  • 2 tablespoons unsalted butter
  • 1 cup couscous
  • 1 cup chopped dates
  • 1/4 cup chopped almonds
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a small bowl, soak saffron threads in 2 tablespoons of hot water for 5 minutes.

  3. In a large skillet, melt butter over medium heat. Season chicken breasts with salt and pepper, then add to the skillet and cook until browned on both sides. Remove the chicken from the skillet and set aside.

  4. In the same skillet, add couscous and cook for 2 minutes, stirring constantly. Add dates, almonds, cumin, coriander, and cinnamon. Cook for an additional 2 minutes.

  5. Add the saffron threads, along with the water they were soaked in, to the skillet. Stir well to combine.

  6. Make a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through. Stuff the couscous mixture into each pocket.

  7. Place the stuffed chicken breasts in a baking dish and roast in the preheated oven for 20-25 minutes, or until the chicken is fully cooked and the stuffing is heated through.

  8. Serve the saffron butter chicken with a garnish of fresh cilantro.
